Its founders, Ahmed Abateman and Khalid Shifa, work hand in hand with smallholders from the surrounding hills: training, cherry prices set in advance every year, and organic farming practices such as composting.\u003c\/p\u003e\n\u003cp\u003eThe Heirloom cherries, old indigenous varieties, are hand-picked from October to January, pulped and washed the same day, then slowly dried on raised beds.
