Un café qui ne cherche pas à impressionner par sa force, mais par sa finesse. Pour révéler son côté terroir, je recommande un tassage normal, sans forcer : laisse l’eau faire le travail. Tu obtiendras une texture fluide, lumineuse, presque comme un thé très aromatique, avec des notes de fruits jaunes et de miel. À déguster en espresso moderne (un peu plus long que d’habitude) pour profiter de toute la complexité du Pérou, sans amertume inutile.
The ideal recipe

Espresso:18g of coffee for a short shot of 30-34g (25-28 sec). The result should be dense, topped with a thick, dark crema. On the palate, there's a bold attack of bitter cocoa that gives way to a long, elegant finish of blond tobacco.
