In western Ethiopia, the birthplace of coffee, the Bedeye washing station nestles in the Gomma woreda, in the Limmu-Jimma region, between 1,900 and 2,000 metres above sea level. Its founders, Ahmed Abateman and Khalid Shifa, work hand in hand with smallholders from the surrounding hills: training, cherry prices set in advance every year, and organic farming practices such as composting.

The Heirloom cherries, old indigenous varieties, are hand-picked from October to January, pulped and washed the same day, then slowly dried on raised beds. This lot comes from the second day of the harvest peak: a precise selection for an exceptionally clean cup.

In the cup: banana, apricot and black tea, with a soft, long, floral finish.

Roasted in small batches by Snob The Bob, near Nîmes, to preserve all the elegance of Ethiopia's great coffees.

Drink it strictly without milk! Milk would kill the delicacy of the jasmine. Lower the water temperature slightly.

The ideal recipe

Dose: 1.5 to 2 scoops for 250 ml.
Temperature: Water off the boil (90-91°C) so you don't burn the floral aromas.
